The BEST Cheese Wedges


I mean who doesn't love cheese sticks. There's a Pittsburgh based restaurant called Pirmanttis all the suburban locations have cheese wedges. They are my absolute favorite kind of cheese stick. So I had to figure out how to make some that were the same or even better.


This is a super easy way to make cheese sticks. There isn't a bunch of cheese that leaks out when frying them. Also you don't have to freeze them prior to making them. Which makes it easier to making any other cheese stick recipe I've tried.


First you need to get what you need to make them. The vessel for the cheese is white sandwich bread. Any type of white sandwich bread will do. For this set we just went with the value brand and it tases just as good. Then you want to pick a cheese, for this time we did sliced provolone. But we have done cheddar or mozzarella, really any type of cheese you would like. Lastly you will need some things to bread them, flour, egg and milk mixture, panko bread crumbs (Italian bread crumbs can substitute), and then some oil for frying.

The first thing you are going to do is make some cheese sandwiches. Sounds too easy putting it in those terms but it really is that easy. The key is to make sure the cheese is more in the center or the bread because of the next step.

The next step is to cut the crust off of the sandwiches and then to cut it int triangles. That is why you don't want to have the cheese off to the side of the bread because then you would be cutting the cheese off with the crust. Then just cut the crustless sandwich into four triangles by cutting it in half diagonally once. Then cut those triangles in half also.

Once you have them all cut you will want to have your stuff for breading them ready. I used about 4 eggs and a splash of milk for all of these. about a cup of flour and I think it was about 2 cups of breading. Once that is ready you're ready to start breading.

Take your little cheese wedge sandwiches and start by dredging them in the flour. Then dip it into the egg mixture. Lastly dip it into the bread crumbs making sure all of the cheese wedge gets covered. You want to bread all your cheese wedges before you start frying them. Don't bread as you go because it will become overwhelming.

Once you have all your cheese wedges all breaded you are ready to fry them. This goes fairly quickly once you start frying. Fry them till golden brown and then you are ready to serve them. Let me tell you they are so good you won't want cheese sticks any other way. They are super easy and if you make most of the loaf of bread it will feed a crowd.

Ingredients

  • Loaf of white sandwich bread

  • Any cheese (provolone, mozzarella, or even cheddar works great!)

  • 4 eggs

  • splash of milk

  • flour

  • breadcrumbs (panko or Italian)

  • Oil for frying


Steps

  1. make cheese sandwiches with cheese and white bread

  2. Cut the crust off you sandwiches then cut them into 4 triangle wedges

  3. Bread all the cheese wedge sandwiches in flour, egg, then breadcrumbs

  4. Once they're all breaded fry them in medium high oil till golden

  5. Serve and enjoy!
