Roasted Tomato Sauce

The Freshness of the ingredients hits to in this taste of the sauce!


There's nothing better than fresh tomatoes. Actually any type of fresh ingredient is amazing and really elevates the taste in any dish that you use them in. That is why I love summer, so the fresh ingredients are so available to work with.


This roasted tomato sauce is one of those dishes you'll want to enjoy when you have all the fresh ingredients. Not only is it so good, it's also so easy!

You're going to want to start by cutting up all you vegetables. Like tomatoes, onion, garlic, and peppers. The way you cut them does not matter. Just cut them any which way so they are ready to go on your baking sheet.

Once they are cut throw them onto your baking sheet. (I was actually throwing them on here because I was on a time crunch for dinner this night.) There's no rhyme or reason to putting them on the sheet just put them on however you think. Then you're going to want to oil and season them with some salt, pepper, garlic powder, and Italian seasoning. Toss them and then throw them into the oven to roast at 435 degrees Fahrenheit for about 20-30 minutes.

I also put some zucchini and mushrooms into the oven to go with it. I cut white mushrooms in half and about three medium zucchini into coins. I spread them both out onto the tray and oiled and seasoned with the same (salt, pepper, garlic powder, and Italian seasoning). I also added grated parmesan to make it really yummy! Then I put that into the oven to roast too.

Once the tomatoes, peppers, garlic, and onion are roasted take them out of the oven. Roast till your heart is content but don't burn them. My heart was content at this level of roasting tonight.


You are also going to want to grab some basil and parsley. Fresh is best for this fresh dish, but if needed you could use dried or frozen. This was my first cut of our fresh herbs from the garden, so I was super excited they were ready to use. They got washed and went right into the food processor with the roasted tomatoes.

Pour the whole tray of tomatoes, onions, peppers, and garlic with all of the wonderful juices into a food processor. Blend those along with the herbs up and you have this wonderful sauce!

Pour the sauce into a pot. I like to put some cream and cheese into it also to make it nice a rich in flavor. This is when you also want to taste it and see if there is any other seasoning the you need in it.

The zucchini should be finishing up in the oven too. When it comes out it should look like this and it's ready to serve! Its tasty with a little crunch with the added cheese.


Then it is ready! so serve the sauce with pasta, meatballs, zucchini, sausage. Its really dealers choice. What I can say is you'll enjoy the freshness of it and you'll be hooked on the roasted tomato sauce. My family loves to make it and they yum it every time we do! m! Roasted Tomato Sauce

Ingredients

  • Tomatoes (about 6-8 big ones)

  • Garlic

  • Onion

  • Pepper

  • Oil

  • Seasoning

  • Herbs

  • Cream

  • Grated Cheese

Steps

  1. Cut the tomatoes, garlic, onion, and pepper any way and put them on a baking sheet.

  2. Oil and season them with salt, pepper, garlic powder, and Italian seasoning.

  3. Roast them in the oven at 435 degrees Fahrenheit until they are soft and to your liking.

  4. Put them in a food processor and whirl them up with some fresh herbs like parsley and basil.

  5. Add the sauce to a pot and add cream and grated cheese. Taste and add any other seasoning if needed.

  6. Serve with pasta, meatballs, zucchini, sausage, or anything to your liking!
