Red, White & Blue Griddle Pancakes – A Festive Summer Breakfast
There’s something magical about waking up to the sizzle of the griddle and the sweet scent of butter melting into pancake batter. This weekend, we leaned into the holiday spirit and made the most delicious thin, crepe-style pancakes—soft, golden, and perfect for stacking or wrapping some goodness. Topped with vibrant fresh blueberries and strawberries, and a dollop of our sweet and tangy sour cream & ricotta whipped topping, these red, white, and blue beauties were a total hit!
Whether you’re celebrating the Fourth of July, Memorial Day, or just a sunny Sunday morning, this recipe is an easy way to bring a little joy to your table.
Red, White & Blue Pancake Recipe
Ingredients:
6 eggs
3 cups milk
1 stick butter, melted
3 tsp baking powder
5 cups flour
2 tbsp vanilla extract
1 tsp salt
Instructions:
Add all ingredients to a blender and blend until smooth.
Preheat your griddle over medium heat and lightly grease it.
Pour the batter into large, thin circles—similar to crepes—and cook until bubbles form and the edges begin to lift.
Flip and cook the other side until golden brown.
Serve warm with fresh berries and the whipped topping below.
Whipped Sour Cream & Ricotta Topping
Ingredients:
3/4 cup sour cream
3/4 cup ricotta cheese
1/2 cup granulated sugar
4 tbsp lemon juice
Instructions:
Add all ingredients to a bowl.
Whisk together by hand until smooth, fluffy, and fully combined.
Top your stack or wrap with a spoonful of the whipped topping, add a handful of blueberries and strawberries, and you’ve got a festive, delicious way to celebrate. These pancakes are light, flavorful, and the perfect base for a creative breakfast spread.
