Easter Leftover Creation


Holidays in a foodie household are always crazy with tons of cooking and then stuffing yourselves with some yummy food. Two days after easter when I recovered from the cooking and there were leftovers in the fridge and an empty belly for lunch, I could get creative.


So here it went, this monster sandwich came alive. Let's talk about it! We had a loaf left of our Italian Easter bread (and let me say I have a really good recipe for that I will add it here one of these days) so it was sandwich time. I decided to start by cutting the bread in half for a sub. Then I made some melted garlic butter and Buttered both sides giving it extra flavor.


We had leftover ham and some homemade Easter Keilbaska so we definitely couldn't let that go to waste. Then added some salami, because why not, and some provolone cheese. That got sent into the oven to get nice and toasted.


I'm from Pittsburgh so how do you not have a good sandwich without fries? The answer is simple you can't. So while that sandwich toasted I fried up some fries. I also cut up some white onion, tomato, and iceberg lettuce. I have found it so easy to just mix the dressing in with the tomato, onion, and lettuce then top it onto the sandwich. For this one, it was just some seasoning, oil, and balsamic vinegar.


Once the sandwich came out I put the salad on it and topped it with the fries. Viola done! Let me tell you it was yummy! Try it the next time you want to be creative with leftovers. It was like a kitchen sink sandwich.
